Default Southern California paint job

I am about ready to paint my '64 CDV. Still has original Lime Green paint - [Paint 34]. Want to keep it original. Two questions:
Do I go with single stage or dual stage paint? (I'd like it to look as good as or better than original but don 't need it to look like a show car)
Where can I go in southern California for a good paint job at a good price? What would a good price even be? (Okay, three questions.)
By way of history, my father bought this car in 1964 and kept it for two years. My grandfather then drove it until early 1980s. It sat for about 35 years until I took it and started the restoration in 2015.

Original paint - horizontal surfaces dead

Vertical surfaces still shiny

Interior in nearly complete

Nice car and pictures! If that car was where I'm from it would be rusted into nothing.
