Hot issue!

Hot issue!
Thank you for accepting me. I dont knowe if I have previously registered, but none the less, I am happy to do it again.
I wrench on my own vehicles and have a recent issue with my 1994 Seville sls.
I purchased the car about 15 years ago with about 30,000 miles from an old man in Florida. The car has been cared for and given me no problems until recently. It now has 104,000 miles and seens to get hot by the guage and warning panel, but my thermometer indicates normal temps under the hood.
Ive changed the coolant, hoses, thermostat, and temp sensor but the temps will start at normal for a half hour (198-203) then suddenly climb through to 255 when I get an "engine hot" indicator.. Before I changed the temp sensor (everything else was done), It would indicate an overheat condition and limp. Shutting it off for a couple of minutes would allow me to start again normally. But now I just get the "engine hot"and after 15 or so minutes the guage will immediately start to lower until ot gets back to 201 or so...
Any ideas? maybe "format" the onboard computer?
