Sometimes when coolant is drained and refilled air can get trapped in the cooling system. The "bubble" can work its way out during the road test or sometimes it won't happen until engine cools. Shouldn't be a big deal as long as it's not reoccurring, you would just add a little more coolant.

The tank you fill is called a surge tank and is supposed to reduce air bubbles in cooling systems where radiator is not the highest point. Typically car should be driven a few miles and then engine allowed to cool and level checked. Coolant is added to full hot mark; normally maybe a quart.

There have been advances in chemicals and there are a lot of extended life coolants now. So it will be ok, some of the "green" coolant goes to 5 years or 100+ miles now. So you have a couple years or more to decide

Again I am sorry for all of the questions but is there anything else I should take care of routinely like that?
Most stuff just follow owners manual. The only thing not in owner manual is to change brake fluid which should be changed every 2 or 3 years. Brake fluid will brake down over time and can cause problem for ABS unit. P/S fluid would be if you had a repair. Many shops will suggest all kinds of fluid flushes. Engine oil flushes are not recommended by GM; even to the point of a TSB denying warranty coverage related to engine oil flushing.
Periodically check water pump belt. It's under small cover on driver side of front valve cover. If it's heavily cracked or pieces missing needs replaced.
