New CTS-V owner here. Does anyone know where I might find a graph relating speed to engine RPM over all six gears? I'd also be interested in RPM vs. horsepower or torque too.

You would most likely only find that info(engine speed vs. vehicle speed) in the engineering papers/parameters for the vehicle. I doubt that particular info would be published for the general public, but it might be out there somewhere.
The best bet would be if someone(such as a magazine) does a comprehensive "road test" data sheet.

The HP/Torque@ Rpm data will be easier to locate, as it should be in the owner's manual, or the Service Manual.
