Default hesitation

The first things that I'd take a look at is the throttle position sensor, if applicable, and then the temp. sensor. Timing could also be off a bit.

Default Tps

If you are standing at the front of the car with the air cleaner off, you will see a black round sensor mounted to the throttle shaft on the left side of the carb/throttle body. The adjustments to this is via loosening two screws to let it rotate either clockwise or CCW. Take your screwdriver with you and do a road test while adjusting it a little at a time. If you don't have the special tool to get the readouts this is the only way to do it. If you don't have the TPS then do the same with the timing, take the 1/2" socket along and do the road test until you hit the timing adjustment that you want. If you have a timing lite then even better.

Default In the future

Do state the year, the model, the engine, etc etc so we don't have to second guess what car you have.

Default Tps

OK then, you must have th carb. engine on the 1980 368. I have the DFI on my 1981 and I think that was the first year for that. So your TPS will be a different adjustment. You will have to drill out an aluminum plug covering the hole to get at the adjustment screw.Drill a small hole in the plug about 1/16 deep and insert a #8x1/2" screw in hole just deep enough to get a pliers on it to pull it out.Be careful not to go too deep and damage the adj. screw head.
